This week's guest, Deborah Madison, is the founding chef of the renowned restaurant Greens and is the author of "Local Flavors: Cooking and Eating from America's Farmer's Markets" and half a dozen other vegetarian cookbooks. She is active in the Slow Food movement, and is on the board of the Seed Savers Exchange and The Southwest Grassfed Livestock Association.
