Some after cooking and recording thoughts: Pay attention to the salt content on the baked feta dish. Use olives that are more herby than salty.

If you can get mozzarella di bufala that's the best cheese for the roasted tomato roll-ups. Otherwise, you can serve the roasted tomatoes by themselves. You can also chunk some nice pieces of parmigiano on a plate. Or you can make the dish with the roasted tomato, a kalamata olive and a caper.
