Artisan ChocolatesI love chocolate so it was a treat to enjoy in SLC a brief Chocolate 101 session at Tony Caputo's Market and Deli. This "must" destination fine food shop downtown has its own cheese cave, an in-house salame maker, and a overwhelming number (more than 300) of cacao bean products including three types of rich chocolate drinks that should come with some type of government warning label.

The devil lurking behind these temptations is one of this week's guests, Matt Caputo. Here's how one website described him. The award winning chocolate tasting classes he teaches at Tony Caputo's Market & Deli are highly recommended by many media outlets, chefs and even numerous international chocolate experts. Matt carries chocolates you would be hard-pressed to find anywhere else, and he has his favorites, including those made by Amano in Orem, Utah, 40 miles from Salt Lake City. I was first introduced to these complex chocolates in Las Vegas where they are used in the desserts created in Mario Batali's three restaurants.  An artisan brand from Italy, Amedi, was another highlight of my tasting adventure.

Also, I got Valerie Gamble to share her top choices.

Chef Liz Peralta will have the burner heating in the studio, plus there will probably be other surprises in store.  We never really know what's going to happen.  A couple of week's ago one of our guests even pulled the plug on the broadcast (accidentally)!
